This is a great recipe to have on hand when you are overrun with tomatoes this summer.  It’s also a good way to preserve tomatoes at the end of the season before they succumb to the first frost.  Try pickling the green ones with onions.

Fried green pickled tomatoes are wonderful.   They are also very good chopped and mixed in with homemade tartar sauce.


 
 
Pickling garlic is easy.  It's a very tasty addition in many dishes.  I like tossing them into stir fries and salads.

Use the freshest garlic available for best results.  For shelf storage, process garlic in a water bath canner.

I love making homemade pickles.  Cucumbers are easy to grow and there are many pickling varieties.  These varieties have thinner skins and will stay crisp when preserving.  They are small, dark green, firm, and bumpy.
 
Pick them when they are small and before they are overripe (turning yellow and smooth).
